I am a Chef/Nutritionist in California working with the Los Angeles inner city after school programs (YMCA, Boys and Girls Club, LAUSD) to better our youth by creating healthy meal options in schools and knowledge to those that need it. Spice Rub

2 tablespoons dark brown sugar

1 tablespoon sweet smoked paprika*

1 tablespoon coarse kosher salt

1 1/2 teaspoons chipotle chile powder or ancho chile powder

Mango Papaya Salsa: Goes Great with a nice piece of Grilled Fish or Chicken


1 mango - peeled, seeded and diced

1 papaya - peeled, seeded and diced

1 large red bell pepper, seeded and diced

1 avocado - peeled, pitted and diced

1/2 sweet onion, peeled and diced

2 tablespoons chopped fresh cilantro

10 to 12 pork chops, cut 1 1/2 inch thick


3/4 c. lemon juice

3/4 c. honey

6 tbsp. soy sauce

3 tbsp. dry sherry or any dry white wine

6 cloves garlic, chopped
